Smacked Burgers

Burger Patties
- 1 lb ground beef (80/20 suggested)
- Your favorite beef seasoning
Burger Toppings
- 6 slices bacon
- 3 slices American cheese (Or your favorite meltable cheese)
- 1 white onion
- 3 pads butter
- 3 burger buns
Fuel
- Smokin’ Pecan pellets (Or your favorite wood pellets)
Preheat & Prepare
If cooking bacon on pellet grill griddle, preheat grill to HOT (e.g., manual mode level 10 on the Searwood).
Cook bacon until crispy, then crumble into small chunks. Set aside.
Reduce smoker to Smoke Boost (180°F) or equivalent setting.
Form & Smoke Patties
Form 3 loose balls of ground beef, season with your favorite beef rub.
Place patties on the smoker and monitor until internal temp reaches ~95°F. If you have a water pan and top rack, place patties on top rack and water pan underneath.
Prepare Onions & Toast Buns
Slice white onion into rings, remove centers.
Place rings in hot pan or on griddle; put one pad of butter inside each ring.
Grill onion rings until softened, browned.
Add Bacon & Cheese
On griddle or pan, form 3 piles of crumbled bacon and top each with a slice of cheese.
Melt cheese into bacon to create cheese-bacon toppers.
Assemble Burgers
Place smashed patty on bottom bun, top with cheese-bacon patty and grilled onion.
Serve immediately while hot and juicy.
